Daniel Humm’s New West Village Restaurant Opens Next Week in a Familiar Space

Daniel Humm, the chef who helped turn Eleven Madison Park into a three-Michelin-star restaurant, is bringing a more casual concept to the West Village, and it’s moving into a space with a long history in the neighborhood.

The restaurant, called Humm, opens October 10 at 435 Hudson Street, between Leroy and Morton streets. It’s taking over the former home of En Japanese Brasserie, which closed in December 2024 after two decades.

The changeover wasn’t a smooth one. As Caper reported, En owner Reika Alexander said she wanted to renew her lease and was prepared to pay more, but discovered the Eleven Madison Park team touring the space while she was still negotiating. Hudson Square Properties disputed any suggestion of bad faith and told Caper that unpaid rent was the subject of active litigation.

According to the restaurant’s description on Resy, the menu will follow the seasons and the market, with produce from Magic Farms, a farm in Hoosick Falls, New York, that grows exclusively for the team’s restaurants. Opening dishes shared with Eater by a spokesperson include crispy feta with sesame and shallot agrodolce, fried eggplant with pickled green tomatoes, and a roasted chicken for two.

Diners can sit in the dining room for the full menu, or at the bar or in the lounge, which both offer smaller food menus. Resy also describes a wine list that mixes established regions with smaller producers.

The space was designed by Pierre Yovanovitch and features art by Francesco Clemente and Rashid Johnson, along with pieces by Louise Bourgeois and Roni Horn, according to the restaurant.

Reservations opened on Resy on October 1.
