Fillings, the New York mini pie company behind flavors like Smoky S’mores and Crème Brûlée, has opened its first in-person shop: a holiday pop-up in the West Village where you can build your own pie flight.

The pop-up is at 272 Bleecker Street, between Morton and Jones streets, and runs from October 29 through December 24, Fillings announced last week on Instagram. The company said the team pulled the whole thing together in three weeks after being told it couldn’t be done. It’s open from 11 a.m. to 8 p.m. on Wednesdays, Thursdays and Sundays, and from 11 a.m. to 11 p.m. on Fridays and Saturdays, or until the pies run out.

The pies are 5 inches across, and you can buy them whole or by the slice for a flight. Fillings says it makes everything from scratch, down to the graham crackers in its crusts. The regular lineup includes Coconut Key Lime and PB & J, and chef Chanah Willis told amNY that two seasonal flavors rotate in every week. Full-size 9-inch pies will be available for pre-order soon, and the shop also sells Fillings-branded apparel and accessories.

Founder Katie Kaplan started the company a year ago as a drop business. She baked small batches and customers picked them up from her directly. Kaplan told amNY the drops were a good way to meet customers and test the concept, but it was hard to make pies consistently and reach people.

Willis said the drops let the team meet customers but never show them the full process. Now the counter gives them immediate feedback on what people actually want. Kaplan said her goal is to bring back pie’s nostalgia with a more elevated feel, and Willis called the pairing of their two styles “a marriage.”
